Coconutty Chicken Strips

The whole family agrees, these chicken strips are so yummy. Especially dipped in some bbq sauce!

I found this recipe in a magazine (I have no idea which one) years ago.
Ingredients:
1 egg
2 Tbsp milk
1/2 teaspoon salt
1/2 cup unsalted peanuts
1/2 cup sweetened flaked coconut
1/3 cup cornmeal
1/2 teaspoon garlic powder
1 pound chicken breasts cut into strips

Preheat oven to 400 degrees.
Line a baking dish with aluminum foil.
Beat egg and milk together in shallow dish.
In blender, combine peanuts, coconut, cornmeal, garlic powder and salt.
Dip each chicken strip in egg mixture and then roll in peanut mixture.
Place in pan and bake for 20 minutes, flipping chicken half way through.





Enjoy!

Just wanted to let you know I am adding you to my sidebar- I have enjoyed looking through your posts but this recipe is the clincher.
I'll do the crafts with Ian (or Kyra will) but the mini-diva loves loves loves coconut shrimp and since chicken is one of the things she does eat so this is a must try for us- maybe I will make some for her bento box (Japanese lunch box we are using this year for school).
Do you think these would be okay eaten cold if I can keep her from hogging them?
