Watermelon Popsicles



Around here, we rely on our daily popsicle in the summertime.

I've been buying the grocery store variety, and those have been delicious, but I thought we'd whip up a batch of our own. A fresher, healthier version.

Here is the recipe we used:

4 cups fresh watermelon - cut into pieces
1/2 cup sugar
1/2 cup hot water
2 teaspoons fresh lemon juice


Mix sugar and water until sugar is dissolved. Add lemon juice and stir. Blend watermelon and liquid mixture in blender. Pour into popsicle molds and freeze overnight.



Deliciously different! They were quick to make and a big hit on a sunny afternoon.

yum now I just need to find those things to pour it in I guess you would call them popsicle molds...lol

I made these today with the kids since we had half of a watermelon left and they were very yummy! The kids loved the process, too.

We used your recipe, and the popsicles were great! My daughter and her friends had a great time making them, and cleaning off the watermelon rinds!
