Ice Cream Sandwiches

Tonight we're having some friends over for a casual backyard dinner. (As opposed to all the formal dining we usually do!)
I bought some fresh chocolate chip cookies from our local bakery and some mint chip ice cream from the grocery store. Only two ingredients-yay!
I let the ice cream soften a little, then put a scoop between two cookies and smashed them together very carefully.

Then I wrapped each sandwich in cling wrap and popped them in the freezer until our friends arrive. I wish I could eat one now!

i did this once for a party with different cookies and ice creams. very fun!

my husband found your blog bc of the link on mine, and he begged me to make these ice cream goodies - so I did.. after a slightly melted mess, we found success. he loved them! we dont have any kids, but i love your site! i am going to make the puff paint soon! :)
