Pumpkin Spice Muffins

These pumpkin muffins are so moist and yummy and fall-festive. And they are so easy, too.
They're an autumn tradition in our home.

Ingredients:
1 box spice cake mix
1 15oz can pumpkin (not pumpkin pie mix)
4 egg whites or 1/2 cup egg substitute
2 Tablespoons water
Allspice-add to taste.

Mix all ingredients in a large bowl until creamy. Fill muffin cups. Bake at 350 degrees for 18-23 minutes.





Mmmmmm...enjoy!

Delicious - I make a cake similar to this using plain white cake mix - I bet this would be even better!! Thanks for sharing.

I love this post! The muffins look great (I just made pumpkin bread yesterday), I love the white pumpkins, the plate they are on, AND I love your red mixing bowl that I have seen in other posts too. The first pic makes me so happy for fall!

Perfect!!! We were apple picking at the Avila Barn yesterday, and had a delicious pumpkin muffin and I thought how much I'd like to have a pumpkin muffin recipe. The house is going to smell great!!!! Thanks!

You can also make these with the cake mix, can of pumpkin, and 1/4 c of water (omitting the eggs). Bake the same temp and time! Only one point on Weight Watchers per muffin this way!

I've made this as a cake for DD's birthday every year. Sometimes with spice cake, sometimes yellow cake mix. Always a hit!

I make the same except use oil instead of the eggs. My son is allergic to eggs so this is an easy recipe that the whole family can enjoy.

I just made these and I got to thinking...hmmmm has anyone ever tried putting cream cheese filling in the middle?? I bet they would be yummy too! LOVE THE BLOG!!!

I made these as cookies...just added the canned pumpkin to the cake mix along with some walnuts and dropped them by spoonfuls onto a cookie sheet lined with foil and sprayed with PAM. They were very moist and delicious!
