Chicken and Broccoli Alfredo

This recipe is a staple in our diets. It was our simple, yummy, and healthy dinner on Friday, and then leftovers on Sunday. The girls love it, and so do Matt and I.

Ingredients:
8 oz whole wheat pasta (I used the curly kind)
1 cup broccoli
1 lb chicken, cooked and cubed
1 can cream of mushroom soup
1/2 cup milk
1/2 cup grated Parmesan
1/2 tsp. pepper

Cook pasta according to package directions. Add broccoli to the pasta for the last four minutes of cooking.Drain pasta and broccoli. Add chicken.
In a separate bowl, mix soup, milk, cheese and pepper. Stir soup mixture in with pasta, broccoli and chicken.
Heat through on stove top.
Top with extra Parmesan cheese.

For the side dishes I served field greens mixed with Parmesan cheese and Caesar dressing and fresh strawberries.

And there you have it. Dinner in a flash!

We are huge alfredo lovers...we have it pretty much every week here too!

We're not big broccoli eaters, though...I think my dad forced me to eat it one too many times when I was little. (-:

Hey there! I love your blog. I'm not sure if I've ever commented before. I think I must've found your blog through The Crafty Crow. Anyhow, I love everything about this blog. When I saw this dish I knew I should give it a try. It was a cinch and a hit. I've never been a fan of traditional Alfredo sauce, but this I like!

oh yum! i can't wait to try it. i love that it isn't so heavy using half and half or whipping cream for the sauce - and it is super easy. thanks for sharing.
