Eat a Toasted Bacon, Egg, and Cheese Sandwich for Lunch


For the past couple weeks I've been stopping at Starbucks and buying their breakfast sandwich and a green iced tea for lunch. Yes, I know, it's supposed to be for breakfast. But it's just perfect for lunch. You've got your protein and whole grains and brain food all wrapped in a neat little package.

I decided to try to make my own Bacon, Egg and Cheese Sandwich at home to avoid having to make another stop, and to save a little money. It's incredibly easy and even more delicious! It's my new thing.

Ingredients:
whole grain english muffins-sliced in two
1 egg
2 slices of bacon-cut in 1/2
1 slice cheddar cheese

To make the process quicker, I bought sliced cheddar cheese and fully cooked bacon. I also whisked the egg with a bit of milk and cooked it in the microwave.

1. Toast the english muffin.
2. Scramble the egg. I cook mine a microwave-safe dish in the microwave for 80 seconds and then sprinkled some salt and pepper on top.
3. Cook the bacon. I bought the fully cooked variety, so I could skip this messy step.
4. Stack the egg, cheese, and bacon strips between the two halves of the english muffin and microwave for 15 seconds.

Eat with a side of fruit and you've got lunch.

I wonder if you could make them up ahead of time, freeze them, and then throw them in the toaster oven/microwave when you are ready to eat?

I make these too! They are a wonderful breakfast, and lunch. I just recently found your blog but I love it! I like the comment above wonder if they could be frozen and then just reheated...hmmm That would make life even easier. BTW, I am having a giveaway this week to celebrate my 1st blog birthday. my mouth is WATERING! WATERING! I would that with fresh summer tomato out of the garden!!! mmmmm I used to get a sandwich on the way to work from La Madeline at it was very similar to your new fav!!!!!!!!!

We make these alot. Mostly on Sundays after church. It is quick and easy. I'll have to get some of that bacon.

We love these too! We call them McMels at my house! :) My husband loves it when i make extras and he can heat them up for a quick breakfast on a weekday morning.

I think we would get along famously! When I go to Starbuck's for breakfast/early lunch, that's exactly what I order! I make them at home too, from time to time...piece of cake! I have recently discovered their new tea lattes and have fell in love with the Refresh Tea Latee-yum!

Speed things up even faster by cooking your egg in the microwave with real bacon bits added in. I use a bowl the about the same size as the muffin. Just spray with pam. Whisk your egg, milk, bacon bits, etc. Cook in microwave 30 seconds, stir and cook for an addition 30 seconds. Comes out wonderful ;~)
