Yum! I love coconut cupcakes. Those look wonderful. Thanks for the link.
Wow. how fun! I love the pancake stacks (and even the cups on her site) and also think the pie looks yummy!
So - do your girls eat a good variety of veggie and fruit? I am wondering if I could get mine to eat the sweet potatoe with the pancake. No Trader Joe's close - so also wondering how we can get healthier options for things like the pancake (hers were whole wheat)
Great ideas! THANK YOU!

Hi Katy,
My girls will each eat different fruits and veggies. They both like broccoli and strawberries. One likes carrots, the other likes bananas, etc.
I really don't try to cater too much to their individual tastes. We tell them they don't have to eat what is served, but there will be no other options or snacks until the next meal. It works with our girls. And they are expanding their likes.
Here's a fun idea I posted about getting kids to eat new things: http://www.flipflopsandapplesauce.com/2009/02/tasty-tasty-club.html
allrecipes.com has a recipe for whole wheat pancakes here: http://allrecipes.com/Recipe/Whole-Wheat-Pancakes/Detail.aspx
