Edamame, Our Happy Snack


Lately, we just can't get enough of these guys. Lunch, dinner, snacks...the girls devour them. I don't know which they prefer more-the salty, yummy taste or the challenge of eating them. Never mind that half the beans go shooting across the room as they try to munch, nibble, and cajole those slippery soybeans from their pods.

Happily, edamame are loaded with fiber, protein and healthy fat. Nice to know because they plow through those things amazingly fast, as evidenced by the pile of empty shells.

Best of all, they're so easy to prepare. I buy them in the freezer section, thaw them in the microwave, sprinkle them with salt, and serve accompanied with an empty bowl for the husks.

The first time I ate edamame, it was on accident. I thought they were green beans. I bit into the whole thing -- husk and all. Whoops.

But I agree they are quite tasty and fun when eaten correctly!

This was the first vegetable our daughter would agree to eat- although she called it "homminaise" for some inexplicable reason. It's been 4 years,and this yummy treat is still called by that name!

We eat these almost daily too! You can buy them at TJ's already shelled (my teenagers aren't into the fun of popping them out anymore). But my fav way to eat them is with you at sushi!!!! (or shogun) XOXO
